When people taste wine they often find the same 'notes' (like apple or pear or smoke or earth) that map closely to flavors of things that were obviously not used to make the wine. This is something about there being chemical components in the wine that are same as (or similar to) the chemicals in those things. I'd imagine whatever's going on with chocolate is the same as whatever's going on with wine?
